2017 Cabernet Merlot

Appearance: Vibrant red with dark cherry hues.
Nose: Varietal aromas of lifted plum, blackberry and spice.
Palate: The palate is juicy with flavoursome black fruits and ripe plums supported by hints of vanilla oak and long grainy tannin.

Vinification: The fruit is harvested in the early morning, crushed and destemmed into our static fermenters. The ferment starts off cool and peaks in temperature between 26-28°C. After 10-14 days on skins the must is carefully pressed. The wine matures in French oak with a slightly higher spice, mocha toast.

Serve: At room temperature 17°C.
Cellaring: Drink now or cellar for up to 5 years.
Food: Woodfired pizza shared amongst friends.
